Roasted Vegetable Medley with a Special Seasoning Mix


Freshly ground herb mixing makes any simple dishes extra special and flavourful. This very healthy and versatile vegetarian dish is great as a side to a juicy cut of meat, but don’t discount those vegetables as a light vegetarian main, with wraps, chickpeas or a bowl of simple steamed rice.


1.Preheat the oven.

2.Trim and slice vegetables (eggplants, carrots, mushrooms, asparagus, cauliflower etc.) into similar sizes, and put them in a large mixing bowl.

3.Add olive oil, salt, a flavourful seasoning mix (freshly ground peppercorn, rosemary, oregano, thyme, basil or any herbs or spices you like, with FinaMill of course :D), toss to coat well.

4.Transfer to the baking tray, and make sure vegetables spread out evenly and not overlapping.

5.Roast until carrots are fork tender. Sprinkle a bit fresh parsley or coriander before serve.
