Spicy Ginger Cookies
There are few things better than a sweet treat during a hard day, or after a nice meal. The spicy ginger cookies offer a zing that can awaken the senses. This recipe is elevated by using the freshest spices you can get. FinaMill it to create and unlock the flavours on demand
Ingredients
- 2 cups flour
- 2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon unsweetened cocoa
- 1 cup granulated sugar
- 2/3 cup vegetable oil
- 1 egg
- 1/4 cup molasses
- 1/2 teaspoon grated fresh ginger
- 1/2 cup chopped candied ginger
- 1/4 cup coarse sugar, for rolling (optional)

- 1 tablespoon dried ginger
- 1/2 teaspoon cardamom
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt
Method
1.Preheat oven to 180° and grease your baking tray/parchment paper is preferred.
2.In a medium bowl, whisk together flour, baking soda, cinnamon, and cocoa. FinaMill black pepper, dried ginger, salt, and cardamom into the flour mix.
3.In a large bowl, beat together sugar and vegetable oil. Beat in egg, grated fresh ginger, and molasses until smooth. Fold in the flour mixture until well combined, then add in candied ginger.
4.Shape dough into 2.5cm balls, roll in coarse sugar if desired and place on baking tray. Bake 8 to 10 minutes until just set.
5.Let cookies cool for 3-5 minutes on cookie sheet, then move to a wire rack until cool.
